Cocktail #1: Tea Party – A play on the Pimm’s Cup with tea, the national drink of UK, added.
2 oz Pimm’s Liqueur
3 oz Earl Grey tea (brewed and chilled)
¾ oz Fresh lemon juice
½ oz Simple syrup*
1 slice cucumber
6 leaves fresh mint
- In a shaker tin, add mint, cucumber, lemon juice, simple syrup.
- Gently muddle ingredients in the shaker tin a couple times.
- Add Pimm’s, chilled tea, and ice.
- Shake 15 times vigorously.
- Double strain into Collins glass or any tall glass and add ice.
- Garnish with mint sprig and cucumber slice.
Cocktail #2: The Lady May – A herbaceous twist on the classic gimlet.
2 oz London dry gin (I am using Beefeater)
¾ oz Fresh lime juice
¾ oz Simple syrup*
3 large leaves fresh basil (add more if you have smaller leaves)
- In a shaker tin, add basil, lime juice and simple syrup.
- Muddle gently. A couple presses will do with the muddler.
- Add gin and ice.
- Shake about 15 times vigorously.
- Double strain into martini glass.
- Garnish with lime wheel and basil sprig/leaf.
*Simple Syrup
In a small pot, bring 1 cup sugar and 1 cup water to a simmer or until all sugar is dissolved. Remove from heat and let cool. Place in refrigerator. Use for up to one month.
